Our meats are selected and cured right here in New York by our own team of butchers, who bring together the very best of Celtic food traditions and high quality North American ingredients.
The pork cuts used to create our gammon are sourced from carefully selected growers in the Québec region of Canada who farm using antibiotic free methods and vegetarian feed.

Quinlan’s Fish of Cahersiveen in Co. Kerry brings us an award-winning organic, smoked Irish salmon, sustainably produced in the pristine Atlantic waters off the County Kerry coast in Southwestern Ireland.
Each individual salmon is cured and smoked by hand, with meticulous attention paid to detail, giving it its unique flavor, texture and quality.

Colliers produce a delicious Welsh Butter made from fresh Carmarthenshire cream and natural sea salt, giving it an unmistakably welsh savory flavor.

Wexford Preserves, established by Ellen O’Leary and her husband Sean in Broadway, County Wexford in Southeast Ireland began producing jams and marmalades over 27 years ago. The company started life in in Ellen’s kitchen in 1988 and grew to become one of Ireland’s favorite preserve makers.
